No Sugar Blueberry mini muffin
I like mini muffins better. They are the perfect size for toddlers. They are big enough for them to eat at once and small enough to prevent hyperactivity.
Here is the good part; Ingredients:
3/4 & 2 tbsp Whole wheat flour
1 Cup Oat Bran
1/4 Cup Honey
1/8 Cup Maple Syrup
2 tsp Baking powder
1/4 tsp Salt
1 beaten egg
3/4 Cup Milk
1/4 Cup Vegetable oil
2 Cup Blueberry
Direction:
Preheat oven to 400 degree F.
Mix all the dry ingredients in a large bowl. Mix the wet ingredients in a medium bowl. Make a well in the dry mixture add the wet mixture and mix until all incorporated. Add the blueberries. You will have a lumpy batter. Spoon the batter in to the paper-lined mini cup muffin tray. Bake the muffins for 10 -15 minutes or until the muffins are golden and a toothpick in the middle a muffin comes out clean. Remove them from the tray and let it cool.
